Cadre Barrel Aged Golden Sour 375 mL Bottles
These sours started off in January 2019. They spent their nascent period fermenting and beginning to acidify in conical fermenters, then were transferred to an American Oak barrel that had previously aged Chardonnay. After a year in the barrel, with further flavor contributions from wild yeast and bacteria like brettanomyces, lactobacillus, and pediococcus, these sours were transferred once again to fruiting vessels, where they were allowed to re-ferment on their respective fruits. After some time, we bottle conditioned them, and further aged the bottles. This is a completely unique and irreplicable beer, and we hope you enjoy it!
